Probe thermometer for puddings cakes etc?

I use a probe thermometer for cooking joints of meat but does anybody know if it can be used for cooking cakes and pouddings. I cant seem to find a tempreature guideline.

Where can I find a set of Brazilian BBQ skewers?

Where can I find the really huge skewers used at Brazilian steakhouses? The brazilian BBQ (churrascaria) uses a number of different style spits/skewers (espetus?) that range from double tonged forks to long spits. Where can one find these on the Internet?
